① The present invention increases the contents of the above-described gamma-aminobutyric acid within a plant, thus enhancing gamma-aminobutyric acid having various kinds of physiological activities in several food materials. Accordingly, several food materials having an effect of preventing imbecility, such as a brain metabolism enhancement effect, can be produced.

② Further, in addition to a modified atmosphere method, glutamateor its derivatives are added, thereby further increasing gamma-aminobutyric acid while fermenting the gamma-aminobutyric acid through lactic acid. In the prevention of imbecility, that is, a gamma-aminobutyric acid effect, cerebral apoplexy, external brain injury, aftereffects of brain artery, the gamma-aminobutyric acid is used in improving transcranial and enhancing brain metabolism. Accordingly, the gamma-aminobutyric acid can be variously used in health food, beauty food, and medicine materials and products.

③ Further, in alternative embodiment, alcohol extracts used in experiments in which gamma-aminobutyric acid is measured can also be used as materials.
