According to the present invention, a microogranism material using a garlic crude extract as a cryoprotectant is suitable for gimchi manufacturing because it does not have an effect on the quality of gimchi when gimchi is manufactured. In a method of storing the microogranism material, it was found that a direct freezing storage method was much better than a storage method after freezing and dry. The time, expenses, energy, etc. requiring the microogranism material could be reduced, and the microogranism material can be stored for a long period of time. Accordingly, the microogranism material can be stably supplied to gimchi manufacturing companies. Further, gimchi fabricated using lactic according to the present invention, bacteria sensitive to acid, or a microogranism material thereof as a single element or a combination thereof provides an excellent advantage in terms of the quality when compared with general gimchi, that is, control.
