Summary of the technology ¤· This technology relates to a method for manufacturing pectinase from a microbe Aspergillus Japonicus and high-activity pectinase manufactured by the method. ¤· A pectinase manufacturing method according to this technology includes steps of selecting Aspergillus Japonicus as a strain; adding polygalacturonic acid of 5~20 g/§¤ as an inducing substance for increasing the yield of pectinase and manufacturing a culture medium with initial hydrogen ion concentration(pH) of 4~8 and a glucose concentration of 5~25 g/§¤ as a carbon source; and shake-culturing the selected species by using the culture medium at a culture temperature of 24~30 ¡É for 24~120 hours.
