1. From the above figure, it can be seen that glutinous rice starch after a high-pressure wet type flowing process experiences structure deformation because of a physical shock. The degree of physical deformation provides characteristics which are equivalent or superior to the physical property of glutinous rice starch obtained after a digestion process in a current oil-and-honey pastry manufacturing process

2. It was conformed that glutinous rice starch manufactured by the present invention is accompanied by a structure change of particles because of a physical shock and therefore exhibits characteristics which are equivalent or superior to the physical property of glutinous rice starch obtained after a conventional digestion process.
